High above Dortmund's rooftops, The Stage offers a dining experience that lives up to its name. The restaurant’s floor-to-ceiling windows frame the city skyline, making the setting as dramatic as the food. Chef Michael Dyllong and restaurant manager Ciro De Luca run the kitchen and dining room with quiet precision, serving modern cuisine that earned a Michelin star in 2026.
Dyllong’s cooking is aromatic and precise. The dinner menu – available in four or six courses – changes with the seasons but often includes a Fjordforelle with beetroot, honey mustard and Madras curry, followed by Black Angus Beef with Jerusalem artichoke, horseradish and tarragon. A milk chocolate dessert with passion fruit and coconut closes the meal. Guests can upgrade to Japanese Wagyu A5 or add N25 caviar with toasted brioche.
A vegetarian menu mirrors the same structure and creativity, using ingredients like beetroot from salt dough, falafel with carrot-ginger broth, and gnocchi with Jerusalem artichoke. The kitchen also accommodates vegan requests.
Since recently, The Stage opens Wednesday and Thursday for a three-course lunch menu at €69, served in 90 minutes on request. For groups of six to twelve, the private dining table offers an exclusive view of the Signal Iduna Park. And for those who want to learn, chef Dyllong hosts seasonal cooking classes built around his aromatic, modern philosophy.
The atmosphere is polished but not stiff. Service is attentive, and the wine pairings – €85 for six courses – are thoughtfully matched. It is fine dining without pretence, set against a backdrop that makes every meal feel like an occasion.
