Tender octopus and edamame, elegantly presented as an appetizer, whet the appetite—for example, for black cod fillet, whose intense natural flavor is beautifully highlighted when paired with green tomato and freshly harvested rutabaga. Wine Sommelier Nicole Blonkowski’s distinct preference for wines from Saxony’s Elbe region and Saale-Unstrut is readily apparent. Rare selections from acclaimed VDP estates such as Bernhard Pawis represent sophistication and expert curation.
