At DIE GOURMET STUBE im Gasthaus Hummel in Duggendorf, the philosophy is clear: charge tradition with modernity. The kitchen brings together aromas from the local region and faraway lands, creating a space that invites pure enjoyment. The result is a fixed seasonal menu that changes with the calendar, always built on the highest quality ingredients.
The five-course menu (145 €) is a carefully composed whole, where each component is chosen with intention. Seasonal produce from the surrounding region takes precedence, though select delicacies come from further afield when quality demands it. A recent iteration featured scallop with avocado and green apple, black salsify with coconut and pak choi, lobster with kohlrabi and lovage, veal top blade with king oyster mushroom and bergamot, and a choice of Brie with chicory and walnut or grapefruit with yogurt and vanilla. Vegetarian adaptations are possible upon request.
Since 2022, the Gourmet Stube has held one Michelin star – an honour that the team values almost as much as the praise of their guests. The award reflects the kitchen’s unwavering commitment to precision and balance, evident in every plate.
The atmosphere is designed to seduce you into lingering. For a more relaxed experience, the adjoining Alte Saal serves traditional Bavarian dishes like the famous braised ox roast, but the Gourmet Stube remains the destination for those seeking a refined, seasonal tasting journey.
