Every ingredient arrives from a known producer within a short distance. Game and free-range cattle come from the Uckermark, Brodowin provides sustainably caught fish, and dairy travels directly from Lobetal. Leafy vegetables move quickly from Melchhof and Hof Schwalbennest straight to the pass. Guests typically build their evening around these sharing plates, combining vegetable sides with rich meats before finishing with local desserts.
