The story
In the idyllic Elztal valley, the Häringer family runs Rössle in Elzach – a classic Gasthaus that has been welcoming guests for four generations. Kristin and Manuel Häringer, together with their team, describe themselves as "Genießer, Lebemenschen und natürlich Gastgeber aus Leidenschaft." Their philosophy is simple: guests arrive as strangers and leave as friends. The atmosphere is relaxed, humorous, yet absolutely professional, giving diners the freedom to enjoy an unhurried meal.
The kitchen at Rössle is rooted in "ehrliche und schmackhafte Wirtshausküche" – honest, flavorful pub cooking. Seasonal and regional ingredients drive the menu. Traditional dishes like Rinderrouladen and Tafelspitz sit comfortably alongside international classics such as a French bouillabaisse or a bold Thai curry soup. Everything is made from scratch, with freshness and creativity guaranteed. This commitment to quality and value has earned Rössle the Michelin Bib Gourmand award, year after year – a recognition of good, affordable cooking.
Beyond the dining room, Rössle offers a cooking school where hobby chefs learn everything from meat and sauces to fish and vegetarian cuisine. Once a month, the kitchen crew hosts a Chef’s Table dinner in the open-plan cooking school space, serving a seven-course menu live in front of guests. The property also includes eleven modern, thoughtfully designed hotel rooms, a breakfast featuring homemade jams, cereals from the local mill, and house-baked sourdough bread, plus a carefully curated wine list that reflects the Baden wine region.
