The story
For decades, Zöllner's Weinstube has been a gathering place for gourmands and wine enthusiasts in the region. The restaurant’s character is defined by a blend of enjoyment and well-being, of cuisine and culture. The historic family property, dating back to 1780, has been lovingly renovated and transformed. The vaulted cellar and interior combine playful design with regional materials—Bavarian woods, hand-forged copper lamps, and watercolors by Franconian artists.
The kitchen’s credo is simple: truly good food can only come from truly good products. The menu draws on herbs and vegetables from the garden, seasonal ingredients like morels, asparagus, and porcini mushrooms, game from local hunting, and fine fish such as Breton monkfish, skate wing, or wild salmon. The cuisine is grounded yet special, traditional yet modern, and always focused on quality.
The Mediterranean influence is evident in dishes like the Yellow Fin Tuna with Asia salad, miso, orange, and salsa, or the grilled scallops with lemon-almond butter, capers, olives, and tomato. Classic cuisine shines through in the fillet of Faroe salmon with lobster foam and red shrimp, or the fillet of biocalf with pesto jus and spring vegetables. A dedicated sommelier recommends the perfect wine pairing from renowned estates, rounding out the experience.
The restaurant’s commitment to excellence has been recognized with a Michelin Recommended award, affirming its place as a destination for those seeking refined, seasonal dining in a warm, historic setting.
