The story
Since opening its doors in November 2011, Fleur de Sel has brought a refined, modern interpretation of Classic French cuisine to the quiet town of Maintal-Dörnigheim, just outside Frankfurt am Main. Chef-de-Cuisine Patrick Theumer, alongside his father Horst Theumer, leads a kitchen driven by four principles: regional, seasonal, homemade, and ever-changing. The menu rotates monthly, showcasing the chef’s inspirations through precisely plated dishes that change with the rhythm of the seasons.
The restaurant’s interior evokes the warmth of Provence, creating a Mediterranean atmosphere that feels a world away from the city. At its heart is an open show kitchen, where guests can watch Patrick Theumer and his team compose each course. The wine list is equally considered, featuring a carefully curated, regularly updated selection of French wines chosen to complement the food.
Fleur de Sel has earned consistent recognition for its work. Since 2019, it has held a place in the Michelin Guide as a Recommended restaurant in the Hanau and surrounding region. It also received 86 points in the 2025 Falstaff Restaurant and Gasthausguide Germany and a 2 Diamond rating. In 2016 and 2018, the restaurant won first place on the television program Mein Lokal, dein Lokal.
The kitchen accommodates dietary needs when advised at booking, and the space is available for private events, from intimate family gatherings to celebrations, even on normally closed days. With its focus on honest, seasonal cooking and a welcoming, familial atmosphere, Fleur de Sel offers a genuine taste of modern Classic French cuisine near Frankfurt.
