Atop the iconic Henninger Turm, Franziska combines two of the most compelling dining trends: rooftop dining and a chef’s table counter. Floor-to-ceiling windows wrap the room, offering a 360-degree panorama of Frankfurt’s skyline and the surrounding countryside. Inside, an open show kitchen with an integrated counter puts the cooking front and centre.

The Spirit of Tante Franziska

The restaurant is named after the great-aunt of Christian Mook, founder of the Mook Group. A gifted and inventive cook, she was ahead of her time—growing her own vegetables, keeping chickens, and blending German home cooking with Asian and oriental flavours long before fusion became a trend. Her kitchen was the heart of the family, a place for laughter, debate, and generous meals of Königsberger Klopse, Falscher Hase, or her own ravioli with Handkäse.

Chef Mathis Thünemann and his team channel that same ethos. The menu is a modern interpretation of German cuisine, guided by the principles of regionality, seasonality, and ethical sourcing. Nothing is off limits—neither technique nor ingredient—as long as it honours the bold, progressive spirit of the woman who once lived at the foot of the tower.
