The story
At San Fen Su Chi, everything revolves around the noodles. The restaurant’s playful name is a bilingual pun: “Nudel” is German for noodle, “Ding” means thing, and the Chinese general manager’s surname happens to be Ding. It’s a lighthearted way to honor the core of the kitchen – fresh, handmade noodles produced in-house every day.
The kitchen skips glutamate entirely, letting the quality of ingredients and technique speak. The menu is extensive, spanning wheat noodles, rice noodles, glass noodles, and filled pastas. Cold noodle salads like kou shui liang mian – a Szechuan-style salad with peanuts, vinegar, and chili – share space with warming soups such as yang rou pao mo, a lamb broth with breadcrumbs, morels, and goji berries. Dumplings come with pork, chicken, or vegetarian fillings, and the wonton soups are equally generous.
San Fen Su Chi earned a spot in the Michelin guide for 2026, a recognition of its consistent quality and authentic approach to Chinese noodle-making. The restaurant has also been ranked among the top Asian restaurants in Frankfurt by the local dining guide “Frankfurt geht aus.”
