The story
In the sun-drenched Glottertal, between the Hochschwarzwald and Freiburg, the Cordier family runs Gasthaus Adler—a hotel and restaurant where genuine Black Forest hospitality meets a Michelin-recommended kitchen. The restaurant’s country cooking is rooted in the region: seasonal, local ingredients prepared with care and served in the romantic, wood-paneled Stuben warmed by three traditional tile stoves.
Since 2018, chef Nicolas Cordier has brought fresh energy to the kitchen, crafting badische cuisine with international influences. The menu changes regularly, reflecting what’s best from nearby farms and forests. Look for dishes like Wildbratwurst with sweet potato purée and mustard cream, or the traditional “Suur-Esse” on Ash Wednesday. The regular Speisekarte and a culinary calendar of special events—from a Wild & Wald month to a festive Silvester gala menu—ensure there is always something new to discover. Regional wines and spirits from the Glottertal accompany every meal.
Whether you are celebrating a family birthday, a wedding, or simply enjoying a Sunday lunch, Gasthaus Adler offers a warm, welcoming atmosphere. In warmer months, the garden terrace is a true jewel for breakfast or dinner. The restaurant’s consistent recognition by Michelin, alongside praise from Schlemmeratlas and Falstaff, speaks to the quality of the country cooking served here—but the true draw is the genuine, unhurried Baden hospitality that makes every guest feel at home.
