The story
Hirschen in Freiburg-Lehen has been welcoming guests for centuries. The traditional Gasthaus Hirschen is the heart of the house: deep ceilings, dark wood, and intimate niche tables arranged around the bar create a setting that feels both sociable and private. The restaurant describes its own atmosphere as “badische Gemütlichkeit” – a warm, unhurried Baden hospitality that makes you want to linger.
The Hirschen complex offers two distinct dining spaces. The Gasthaus Hirschen is the classic choice, steeped in history. Next door, the Restaurant Mühlenbach takes a more modern approach – bright, airy, with high ceilings and pale colours. Both serve the same menu and are backed by the same service team, led by Werner Baumgartner, who personally attends to guests, carving and filleting tableside. The restaurant is also available for private events of up to 150 people.
When the weather cooperates, the action moves outdoors. The garden terrace, shaded by old trees, offers the same menu as the indoor restaurants. On warm summer days, breakfast is also served on the terrace – a relaxed spot to start the day.
The kitchen at Hirschen has earned consistent praise. It holds a Bib Gourmand from the Michelin Guide, and was awarded 15 points by Gault&Millau. In 2026, Michelin again listed the restaurant as Recommended, confirming that the Baden cuisine served here remains among the most dependable in the Freiburg area. A broad wine list, an attentive young team, and a focus on individual service round out the experience.
