The story
Kuro Mori is a Freiburg restaurant that brings together the precision of Asian culinary tradition and the earthy abundance of the Black Forest. The kitchen takes inspiration from the Japanese Kaiseki – a multi-course meal that values seasonality and presentation – and translates it into a series of small "Schwarzwald-Asia-Tapas" meant for sharing. This approach, alongside a broader menu of contemporary Asian fusion dishes, has earned the restaurant a Michelin Recommended distinction for 2026.
The tapas selection changes regularly, but has included a beef tartare on a brioche bun, a makimaki roll with soy dipping sauce, a crispy rice paper parcel with mango-chili cream, and a Tom Kha Gai with spiced oil. A vegetarian version is also available. For a deeper dive, the Kuro Mori menu offers a four- or five-course progression. Recent highlights include ceviche of Black Forest trout with kohlrabi, salted lemon, and coconut; zander with sweet potato, chickpea, and mint sambal; and Poltinger lamb with bulgur, parsley, and dried fruit. Desserts like a tonka bean Bavarian cream with rhubarb and oxalis or a “Black Forest Cherry” reinterpretation with chocolate and shiso cress show the kitchen’s playful confidence.
The wine list is built around German top producers, with a special focus on Riesling – a grape the team finds especially suited to Asian flavours. A few French, Spanish, and Swiss wines round out the selection. The space includes a bar that opens after 21:00 for drinks, and outdoor seating is available when the weather cooperates.
