Starters such as Schwarzwurzel with Schmand and Wasabi, or Forelle with Gurke and Kefir, show a balance of clean flavours and precise technique. Main courses might include Adlerfisch with Fenchel, Haselnuss, and Limette, or Zweierlei Ente paired with Karotte, Miso, and Apfel.
