The story
Since 1861, the Fuchs family has run the Romantik Hotel Spielweg, set deep in the Münstertal valley near Freiburg. Today, sisters Kristin and Viktoria Fuchs carry the tradition forward, bringing fresh energy and a playful, “fuchsteufelswild” spirit to the house. The hotel is a place of many rooms and corners, a pool by the stream, a wellness area, and a kitchen that draws guests from far beyond the Black Forest.
Chef Viki Fuchs trained with Douce Steiner, cooked at Schloss Elmau, and explored the high Thai kitchen before returning home. She now runs the stoves with a young, ambitious hand. Her cooking is a love letter to wild, seasonal Baden cuisine, but the influences are wide. The kitchen’s Asian Fusion approach is most evident in her now-legendary steamed wild boar dim sum, a dish that has become a signature. The menu changes daily, drawing on produce from the family’s own hunting grounds, a local trout farm, and the Lindenbrunnenhof vegetable farm. Herbs come from Sabine’s garden. The result is a cuisine that feels both rooted and adventurous.
The restaurant holds a Michelin Recommended distinction, a nod to the precision and creativity in every plate. Since 2018, Viki has been a member of Jeunes Restaurateurs, a network of over 350 ambitious restaurants across 16 countries—a constant source of inspiration and quality. The Spielweg is also a certified Naturparkwirt, meaning it commits to at least three regional main courses year-round, supporting local farmers and butchers. The philosophy is simple: high-quality, fresh ingredients, prepared with respect.
The current evening menu offers both a classic Spielweg menu and a wilder, #fuchsteufelswildes menu. The latter includes fried chicken with honey-sesame glaze and house-made kimchi, followed by miso wild duck ramen, and veal cheek braised in green Thai curry with miso-grilled eggplant. Desserts like an iced peanut slice with mango and salted caramel lean into the Asian Fusion theme. The wine list, including local Gutedel and Spätburgunder as well as Champagne, is carefully chosen. The midday menu offers a smaller, continuously warm selection. The Spielweg is open daily, with a warm welcome for walk-ins and overnight guests alike.
