The story
Since 1722, the same family has run the Wirtshaus zur Sonne in Glottertal, just outside Freiburg. Today, Johannes and Emilie Dilger continue that legacy, drawing on generations of know-how. The restaurant’s Michelin Recommended status reflects a kitchen that stays true to its roots: classic cuisine and country cooking, shaped by the Black Forest and its seasons.
Step inside and you’re in a proper “good room” – warm, unhurried, with a tiled stove and the original Schwarzwald Stube. The terrace, wrapped in flowers, looks out over vineyards and forested hills. It’s the kind of place where you settle in for the afternoon, whether at a wooden table indoors or on a garden lounger with a glass of regional wine.
The menu changes with the calendar. Wild from local forests, fish caught fresh, homemade Spätzle, and slow-cooked roasts are staples. There’s always a vegetarian option, and Friday brings a small set menu (fish, meat, or veggie) for lunch. For those who want the full experience, the four-course surprise menu – available on request – lets the kitchen show what it can do with the season’s best.
Everything is grounded in badische tradition: hearty, honest, and made from ingredients sourced from the Glottertal and surrounding region. The Dilgers call it “bodenständig” – down-to-earth – and that spirit runs through every dish, from the game specialties to the daily changing plates. It’s classic cuisine in the truest sense, supported by a carefully curated wine list that balances local and international bottles.
The Wirtshaus zur Sonne is open Monday, Tuesday, and Friday through Sunday, with Wednesday and Thursday as rest days. The adjacent Kiosk offers a more casual option for spontaneous visits.
