The story
After earning his reputation in Berlin’s competitive restaurant scene, chef Andreas Staack traded the city noise for the quiet of Brandenburg. At AS am See in Bad Saarow, he runs a Vinothek, Bistro, and Restaurant that feels both polished and unhurried. The setting is casual yet stylish, with outdoor seating that lets the lakeside atmosphere do its work.
Staack’s cooking is rooted in seasonal, mostly regional ingredients. He composes modern, zeitgemäße menus that surprise with creative combinations. A sample five-course menu might begin with two preparations of tuna, cucumber, ginger, and wasabi ice cream, move through asparagus foam and lamb with green vegetables and rosemary butter, and finish with a Valrhona chocolate tart, mango, and caraway ice cream. Each dish is built to pair with carefully selected wines – a five-glass accompaniment costs €48 alongside the €72 menu.
The Michelin guide has awarded AS am See a “Recommended” status, highlighting the restaurant’s consistent quality. But Staack’s involvement goes beyond the kitchen: he also works the front of the house, bringing a light, professional touch that makes guests feel at ease.
