The story

Elysium Grän: Gault&Millau 14.5 Points for Alpine Fine Dining

The kitchen and culinary direction

Elysium in Grän delivers a refined Alpine cuisine under the guidance of Chef Daniel Dieter Kill. Located within the freshly renovated five-star Hotel Bergblick, the restaurant opened its doors to external guests seeking a structured tasting journey. Kill approaches the menu with an eye for architectural plating, offering both five- and seven-course options. He ensures every element serves the overall composition. The kitchen operates with a clear vision, rewarding attentive diners who value precise technique.

Standout dishes and flavors

Distinctive preparations anchor the service. Scallops appear alongside pea ravioli and morels, merging coastal flavors with alpine fungi for a layered bite. A two-way presentation of lamb follows, offering contrasting textures within a single plate. These entries reveal the chef's attention to ingredient pairing. Precision here sets a high bar for the meal. The shellfish and meat highlights demonstrate how regional sourcing meets modern execution.

Design and dining atmosphere

The interior design embraces a daring palette. Grey wall paneling contrasts sharply with plush pink velvet furniture. Gault&Millau highlights this combination as a deliberate, eccentric choice that defines the room's character. Large openings frame views of the peaks above Grän. The dramatic decor rests comfortably within the Alpine landscape. Guests dine in this curated space, surrounded by materials that demand attention.

The newly redesigned Elysium in the freshly renovated five-star Hotel Bergblick also welcomes outside guests. A five- or seven-course menu is offered in an extravagant setting: gray wood paneling meets pink velvet furniture – a bold, unconventional combination. Culinary standouts include the scallops with pea ravioli and morels, as well as the two preparations of lamb. The remaining courses, however, lack the sophistication of these highlights. The service occasionally appears uncoordinated, but is friendly and attentive. The wine recommendations remain superficial, the wait times are a bit too long – and watercress makes a surprisingly frequent appearance. Overall, an exciting concept with great potential, though it still lacks that final touch of refinement.
