The story

Vinophil in Gaggenau – Contemporary Cuisine with Regional Soul | Michelin Recommended

In the Murgtal valley, just a short drive from Baden-Baden, Vinophil brings a fresh, personal take on contemporary cuisine to Gaggenau. The restaurant, run by hosts Bruno E. Craveiro and chef Julian Meiswinkel, is built on years of hospitality experience and a clear conviction: quality comes from knowing your suppliers and using almost exclusively ingredients from the surrounding region.

The kitchen’s philosophy is summed up simply: “modern, regionally inspired cuisine and fine wines from the sommelier.” Menus change every four to six weeks, reflecting the seasons with precision. A recent menu shows the range: starters like hand-cut beef tartare with an Asian twist—rice paper, soy, sesame—or a river crayfish cocktail with wild herbs, mango, and papaya. Main courses might include Iberico pork cutlet with baked polenta and smoked almonds, or tuna with wok vegetables, soba noodles, and miso-ramen. Vegetarians are well served with a baked celery parcel in a creamy celery, apple, and vanilla sauce, or Schlutzkrapfen filled with fresh cheese and spinach.

Desserts are equally considered—rhubarb “Scheiterhaufen” with brioche and vanilla foam, or a cheese selection from affineur Maison Kober. The wine list is curated by a sommelier, and the bar offers cocktails like the Sonho do Brasil.

The setting is relaxed and accessible. The restaurant seats 50 guests inside, with another 50 on the terrace—where dogs are welcome. The interior is barrier-free. Vinophil also offers catering and private event hosting outside regular hours.

Vinophil’s consistent quality and clear regional focus have earned it a Michelin Recommended distinction—a recognition that aligns naturally with the restaurant’s own high standards. It’s a place where the cooking is confident, the welcome is warm, and the evening unfolds at its own pace.

Concept Modernly furnished restaurant with an integrated wine shop and summer terrace, designed in warm brown tones. Four-course menu, à la carte, and weekday lunch service. Numerous themed evenings, mostly centered around wine, featuring guest chefs. Culinary Style Refined cuisine with French roots. Head chef Julian Meiswinkel enjoys incorporating Asian flavors: hamachi is cured as sashimi with lime oil and fleur de sel, then served with savoy cabbage, juniper gel, and mustard cream; the wels catfish is poached in saffron stock and accompanied by blue mussels and root vegetables. Another highlight is the veal tripe with scallops, plated with champagne foam, seaweed "caviar", and spinach. Vegetarian option: Ravioli stuffed with Taleggio, served with autumn trumpet mushrooms, Jerusalem artichoke, and gremolata. Wine Sommelier Bruno Craveiro maintains close ties with his favorite producers and finds the perfect bottle from the extensive international wine list, which features a core selection of Baden and French wines. Atmosphere In the spacious, bright dining room, friendly and dedicated staff deliver attentive service. Conclusion Relaxed enjoyment among welcoming hosts.
