The story
At Intuu in Göttingen, Japanese and South American classics come together in a relaxed, vibrant setting just steps from the train station. The restaurant is part of the FREIgeist Göttingen Innenstadt hotel, but it stands firmly on its own as a destination for ambitious, flavour-driven cooking.
The kitchen is led by chef Stefan Wiede, whose team prepares high-quality sushi, sashimi, and nigiri alongside dishes finished on a Josper charcoal grill. Meats, fish, seafood, and vegetables emerge from the Josper with deep, smoky intensity and remarkable juiciness. The menu is built around the Nikkei tradition — the fusion of Japanese techniques with South American ingredients — and it shows in dishes like Shoyu Poke and grilled specialities that balance umami with bright, acidic notes.
There are no fixed course sequences here. Instead, dishes arrive as they are ready, served family-style so the table shares and explores together. For those who prefer to leave the choices to the chef, an Omakase option lets the kitchen select a progression of its best sushi.
