At the foot of a thousand-year-old castle ruin, just outside Göttingen, Novalis brings a distinctly unhurried elegance to the table. Chef Florian Rabbethge and his team focus on handcrafted dishes built from the best ingredients the region offers – game from the estate’s own hunt, Leinetal smoked fish, fresh eggs and meat from a neighbouring farm, and organic dairy from Elkershausen. The kitchen philosophy is rooted in sustainability and proximity: almost every product comes from within a few kilometres.

The atmosphere is deliberately relaxed, echoing the hotel’s motto of “perfectly imperfect luxury.” Guests can expect a fine dining experience without rigid etiquette – warm, family-style service that feels more like a generous invitation than a formal affair. The restaurant was awarded 85 points by the Falstaff Hotel Guide and ranks among the 500 best gourmet restaurants in Germany, and it has also earned a Michelin Recommended distinction for 2026. These recognitions reflect a quiet confidence in what the kitchen does: letting the region speak through the plate.

The menu changes with the seasons, offering both classic cuisine and international touches. A vegetarian menu, sourced directly from farmers in the neighbouring village, sits alongside regional hunting specialities. The team is happy to recommend a wine from the cellar or a digestif from the Hardenberg Distillery, whose whiskies are made on the estate. Lunch is served daily, and dinner runs into the evening, with breakfast – a generous buffet of regional eggs, grains, bread, and fair-trade coffee – starting the day on a welcoming note.

Part of the Relais & Châteaux Hardenberg BurgHotel, Novalis occupies a beautifully restored half-timbered building in the Leine Valley. The setting is as much the draw as the food: the castle ruins above, the surrounding nature, and the sense of being somewhere that has been quietly perfecting its welcome for years. Dogs are welcome in the restaurant and on the terrace.

Concept In the historic castle hotel (Relais & Château), the seasons set the tone in the restaurant with various seasonal specials. Tasting menus and à la carte options are available, including vegetarian dishes. Culinary Style Malte Gunzert places the ingredients at the forefront of his menu, whether serving a trout from Edesheim with Moringer carrot, red cabbage, and yogurt, or North Sea cod accompanied by potato ragout, creamed greens, and trout caviar. The pink-seared venison loin is presented in classic fashion with lingonberry jus, savoy cabbage, and parsley root. In the vegetable version, young spinach accompanies beetroot dumplings, Belper Knolle cheese adds savory notes, and verjus provides delicate acidic accents. Wine An extensive selection featuring specialties from the house distillery. Atmosphere The historic stone structure with its original parquet flooring has been refreshed with a relaxed, casual touch. Conclusion Savor regional cuisine in a historic setting.
