The story
The kitchen follows a clear concept of classic cuisine, offering two distinct menus. The first features fish, shellfish and meat – think warm octopus salad with bean vinaigrette, pike-perch with scallion crust, or Holstein veal rack with a mustard crust and chanterelle gnocchi. The second is a fully vegetarian alternative, with dishes like poached Demeter egg on artichokes or creamy burrata with chanterelles. Guests choose between four and eight courses, and the menus change regularly with the seasons.
Michelin recognised this consistent, honest cooking with a Recommended distinction for 2026 – a nod to the precision and clarity on every plate.
H'manns is also family-friendly: younger guests are welcome to experience the same menu (recommended from around age twelve) or a simpler “Räuberteller” to share with the adults. The team asks to be informed of any allergies or dietary needs at the time of booking, as last-minute changes are not possible.
