The story

Mühlenhelle - Bistro | Gummersbach | Michelin Star & Bib Gourmand

Two worlds under one roof

In Gummersbach-Dieringhausen, the Mühlenhelle combines a refined Michelin-starred restaurant with a relaxed bistro, all housed in a family-run hotel. Chef Michael Quendler, born in Klagenfurt, brings the full sweep of his culinary background to the table: contemporary European gourmet cuisine in the restaurant, and down-to-earth Austrian regional cooking in the bistro. The team’s philosophy is straightforward — “simply enjoy” — and that spirit runs through every meal, whether you’re settling in for a multi-course dinner or a quick lunch.

Star‑quality cooking, season‑driven

The restaurant earned its Michelin star in 2012, and it also holds a Bib Gourmand for good-value, high‑quality cooking. The kitchen works with a monthly changing menu built around the best of what nature delivers each season: vegetables, fruits, meat and fish at their peak. Guests can order à la carte from the multi‑course options, and one menu is always vegan or vegetarian. The result is a feast that meets Quendler’s own exacting standards, crafted with “handwerklicher Perfektion und Liebe zum Detail.”

A vinothek shaped by expertise

Birgitta Quendler, a sommelier who has worked in renowned restaurants, curates a wine list of around 650 labels. The focus is on German and Austrian wines, alongside a broad selection of sparkling and sweet wines, with room for classic European regions and the New World. The vinothek doubles as an intimate dining space for up to ten guests, and as a place to enjoy an aperitif or digestif surrounded by the bottles themselves.

Bistro warmth, Austrian soul

In the bistro, Quendler’s roots come through in hearty Austrian dishes served in a Mediterranean‑style setting. In fine weather, the idyllic garden terrace — complete with a playground — invites families to linger. Sunday and holiday afternoons bring Austrian pastries and coffee. Vegetarian and vegan options are always available, and the bistro operates from breakfast through dinner, making it a welcoming stop any time of day.

A place to stay, a place to gather

The Mühlenhelle is more than a restaurant: it’s a four‑star hotel with 16 rooms, and the entire property can be booked for private events. Three electric‑vehicle charging stations are available for guests. The team’s membership in the Jeunes Restaurateurs d’Europe network underscores their commitment to “Talent und Passion” — a promise that holds true whether you’re here for a star‑lit dinner, a casual bistro lunch, or a weekend away.

Concept Michael Quendler cooks straightforwardly, yet with subtle finesse: scallops with peas, mushrooms, and bacon strike a harmonious balance between sweetness, spice, and umami. The veal Tafelspitz impresses with its delicate texture, paired with spinach pasta and Parmesan – classic in approach, modern in its lightness. To conclude, the (not overly sweet) dessert of berries, tonka beans, meringue, and Cru Virunga chocolate blends freshness and depth.
