Since 1811, the Ratshotel in the historic heart of Haltern am See has welcomed travelers and gourmands alike, just 30 minutes from the Ruhr region. Within this intimate, traditional hotel, the Ratsstuben is where Chef Daniel Georgiev brings his Michelin-starred vision of Modern Cuisine to life. Since 2017, his dedication has been recognized annually with a Michelin star for high-quality cooking.

The Experience

The Ratsstuben is a space for moments of pure enjoyment. Georgiev’s credo is to spoil his guests completely, and the experience begins with a uniquely composed menu. The evening unfolds as a sequence of refined, seasonal dishes, from a Vinschgauer bread with Échiré butter to a trout tartare with watercress and blueberries. The menu progresses through options like sautéed morels in sherry, Loup de Mer with dill and beurre blanc, and a lamb rack with artichokes and goat cheese.

Wine and Atmosphere

A dedicated sommelier is on hand to curate a wine pairing for each menu, ensuring every course is complemented perfectly. The dining room offers air conditioning for comfort, but the true atmosphere is one of focused, unhurried hospitality. Concept The restaurant’s name sounds unassuming, but nothing here is old-fashioned. The menu features five to seven courses; an affordable “Surprise Menu” with four courses is available only Tuesday through Thursday. Culinary Style French classics, interpreted in a contemporary manner, form the indispensable foundation of Daniel Georgiev’s style. Yet it still leaves room for inspirations from Germany and across Europe. Dishes such as venison loin from the Müritz region with pear and pepper, red cabbage, and dumplings make for an aromatic autumn offering. And don’t shy away from premium ingredients! Chestnuts and hazelnuts are paired with goose liver and truffles. Generously portioned caviar crowns a composition of smoked eel, cream cheese, and potato. Wine Sommelier Yasin Aktas draws recommendations from an international portfolio of over 300 wines. An eye-catcher in the dining room is a glass, walk-in climate-controlled wine cabinet.
