The weekly-changing menu (Kalenderwoche 11) showcases a balance of land and sea. Starters range from a Skrei ceviche with bergamot, avocado and sesame cracker to a gratinated pike-perch meatball with dill, Holsteiner potato salad and caviar cream. Soups include a broccoli-almond soup with chopped farm egg and a beetroot consommé with beef brisket and vegetable brunoise.
Mains lean hearty and European: grilled hake with salsa verde and artichoke-potato gröstl, bouillabaisse with gurnard, prawns and mussels, and a classic boeuf bourguignon with bacon, pearl onions and pommes duchesse. For lighter options, there are two vegetarian dishes – arancini filled with smoked buffalo mozzarella, and a savoy cabbage-bulgur roulade with dried tomatoes and pine nuts.
Desserts stay true to the kitchen’s style: baked apple fritter (Ofenschlupfer) with cardamom apple compote, caramelised cheesecake with blackberry sauce, and stracciatella parfait with kumquat compote.
