The story
Since early 2024, GLORIE has been the à la carte restaurant on the upper floor of the 100/200 complex in Hamburg’s HafenCity. Chef Thomas Imbusch and host Sophie Lehmann welcome guests into a space they call their “living room on the gallery” – a setting that feels both everyday and special. The kitchen earned a Michelin star in 2025, alongside a green star for sustainability, placing GLORIE within a rare constellation: three Michelin stars and two green stars under one roof.
The menu at GLORIE is a deliberate rediscovery of classic cuisine. Imbusch works with French and German traditions, serving dishes like lobster Thermidor and pâté en croûte with sauce gribiche – old-school techniques executed with modern precision. The cooking is unpretentious but technically exacting, presented with a casual elegance that matches the room.
Another specialty: aged and refined steak cuts from the restaurant’s own cattle, sourced from “Färsenflüsterer” Andreas Westphal in Heidenau. These are prepared in a Molteni oven and cast-iron pan, served precisely to the guest’s preference. Yet GLORIE is equally committed to vegetarian compositions – the kitchen insists the restaurant is for everyone, with no fixed menu obligation and space kept for spontaneous visits.
The contemporary edge lies not in gimmicks but in the clarity of the cooking. Imbusch’s interpretations are modern without losing the soul of the originals. The wine list and service match the kitchen’s ambition, and the atmosphere remains relaxed – a place for a proper dinner without ceremony.
