The story
Werner Henssler founded this venue in 2001 alongside his eldest son Steffen, drawing on decades of experience that includes a Michelin star at his former restaurant Le Délice. Current head chef Toni Henssler arrived in 2023 after training at Tantris in Munich and Grashoffs Bistro in Bremen. The team follows a strict protocol for sourcing, personally inspecting every delivery to ensure the quality of seafood and produce.
Architects Udo Strack and Peter Schmidt shaped the interior to balance raw industrial elements with a metropolitan energy suited to the Altona district. The building accommodates one hundred and forty covers indoors, adding sixty terrace seats when the weather permits. Diners can observe the workflow through a twenty-metre-wide kitchen window that runs along the main seating area.
The menu merges classical sushi traditions with adapted international recipes, highlighting dishes such as tuna tartare and salmon fillets cooked Teriyaki style. A central sushibar offers fresh rolls and nigiri, complemented by hot options like tempura. Parties of ten guests or more may reserve the Classic evening menu, which provides a curated sequence of courses.
