The story
In the rural Elb-Suburbs of Hamburg, HYGGE Brasserie & Bar occupies a former polo stable, transforming it into an urban hotspot where the Danish concept of hygge—zest for life, comfort, and togetherness—comes to life. The Michelin Bib Gourmand award recognises the restaurant's commitment to good quality, good value cooking, a distinction earned through its creative seasonal cuisine and warm, unpretentious service.
The kitchen, led by head chef Thomas Nerlich (named among Germany's Top 50 Chefs for three consecutive years), focuses on regional, high-quality ingredients. Every supplier is known personally, ensuring that the produce—much of it grown on the restaurant's own 2,000 m² farm in western Hamburg—arrives at its peak. The menu is designed for sharing: all dishes can be ordered family-style, reflecting the belief that hygge is best enjoyed together. The seasonal cuisine changes with what the land and local partners provide, letting the ingredients speak without unnecessary fuss.
The bar at HYGGE is no afterthought. Named the best restaurant bar in the Falstaff Bar Guide 2024, it offers a range of own creations alongside classic cocktails, all mixed with homemade syrups and ginger beer. Bar chef Tim Pabel and his team bring the same precision to drinks as the kitchen does to food. For wine, head sommelier Lennart Wenk guides guests through a list that spans from Aglianico to Zierfandler, pairing bottles with everything from oysters to Zabaione.
Inside, the space retains the character of its equestrian past—cosy leather sofas, an open fire, and a relaxed atmosphere that invites lingering. Outside, beehives and the farm garden add to the sense of place. Whether dining in the main room or celebrating with up to 100 guests in a private takeover, the experience stays true to the Danish idea of enjoying the moment.
