The story
For decades, Jacobs Restaurant at the Louis C. Jacob hotel has defined Hamburg’s dining scene. The kitchen is led by Thomas Martin, whose precise, clear style has shaped the menu since 1997. After ten years with two Michelin stars, the restaurant shifted to a more relaxed yet uncompromising approach in 2022. The result is a modern interpretation of classic cuisine, where seasonal, regional, and organic produce take centre stage. The Michelin Guide’s Recommended status for 2026 – alongside a renewed spot in Der Feinschmecker’s “Best Restaurants in Germany” – reflects this enduring quality.
The dining room is an exercise in understated elegance. Grey and green tones dominate the interior, while large arched windows frame the legendary Lindenterrasse and the Elbe beyond. The view changes with the light and the tide – a living backdrop that shifts from morning gold to evening pastels. The original stucco ceiling and four wall paintings from the 1895 ballroom remain, adding a sense of history without stuffiness. With 74 seats, the atmosphere is intimate yet unhurried.
Thomas Martin’s cooking is grounded in French technique but infused with local flavours – a “French culinary art with a Hanseatic twist,” as the house describes it. Dishes are built on precision and clarity, letting ingredients speak. The menu changes with the season. For wine pairings, sommelier Mika Müller – who trained at Landhaus Scherrer and Traube Tonbach – brings a quiet expertise to the table. Martin’s influence extends beyond the kitchen: his Instagram cooking videos have earned him a following, and he regularly appears as a juror on the TV show “Die Küchenschlacht.”
Dinner at Jacobs Restaurant is neither stiff nor rushed. The service is attentive but warm, the pace set by the courses. The kitchen’s modern cuisine – think French foundations with subtle Nordic clarity – makes each plate a precise composition. Classics like brioche with trout caviar or sautéed sourdough with anchovies and olive oil appear on the “for starters” list, but the full tasting menu is where the kitchen’s ambition shines. The real star, however, may be the view: as the sun sets over the Elbe, the restaurant feels like a place apart, connected to Hamburg’s maritime soul.
