Stefan Fäth discovered his passion for cooking as a child, learning at the wood-fired oven on his family farm. He honed his craft under renowned German chefs, most notably as the right hand of Dieter Müller on the MS Europa. That experience shaped his vision for a kitchen that is technically exacting yet creatively free. In Hamburg, he built Jellyfish into a destination for modern cuisine, earning a Michelin star for its consistent, high-quality cooking.
The menu is a journey through intense, surprising flavours. Dishes such as smoked eel mousse with bean, nashi pear and savory, or Breton scallop in a shiitake tea, showcase Fäth’s focus on seafood and precise seasoning. The progression moves from snacks and bread to amuse-bouche, fish, game, and cheese, ending with a Williams Christ pear dessert. Each course is presented with clarity and an understated elegance.
An extensive wine list – and a carefully curated non-alcoholic pairing – complements the meal. The sommelier selects wines that either enhance or contrast the flavours, from Champagne to German Rieslings. The "Interesting Wine List" tag reflects a thoughtful, international selection.
