The story

Koer Hamburg – Michelin-Starred Modern Bistro with Curated Wine & Bar Experience

Origin and Philosophy

Koer takes its name from the Low German phrase “in de Köör gahn” – to make a choice. For owners Paul Decker (chef) and Joshua Stagraczynski (sommelier), that choice is intentional: sourcing exceptional seasonal and regional ingredients, preparing them with creativity and craftsmanship, and serving them in a setting that balances casual fine dining with genuine hospitality. The result is a restaurant that feels both welcoming and precise, where modern bistro cuisine meets a lively bar culture.

The Kitchen

Chef Paul Decker and his team curate a journey through aromas, flavors, and textures. The menu revolves around what is fresh from local farms and partner producers – a modern market cuisine that changes with the seasons. The recommended way to experience this is the rotating carte blanche menu, which can also be prepared vegetarian. The kitchen’s commitment to quality was recognized with a Michelin star, a reflection of the dedication to detail and the celebration of regional produce. Standout touches include oysters from seasonal sources, house-made bread with whipped nut butter, and small snacks like Backhendl pralines or a cheese selection with dried fruit chutney.

The Bar & Hospitality

Joshua Stagraczynski oversees the wine list and the warmth at the table. The bar serves exceptional house cocktail creations, neo-classics, and non-alcoholic alternatives. In cooperation with the kitchen, they offer high-quality oysters and a curated selection of hors d’oeuvres for spontaneous visits at the bar – first come, first served. The wine program highlights German estates, Grand Cru Champagne, and organic growers, with many wines available by the glass.

Atmosphere

Set between the Leinpfadkanal and the Alster in Hamburg’s Eppendorf neighborhood, Koer’s dining room is described as vibrant and cozy. The tone is set by attentive hosts and an open-minded philosophy. On Sundays, the kitchen offers a three-course menu with wine pairings from 5pm to 8pm in a more bistro-style setting. Culinary Style Paul Decker serves delicate creations featuring predominantly Nordic ingredients – for example, an amuse-bouche of onion tart churro with sour cream and a mini mushroom tart adorned with various edible flowers. For the starter, he combines Limfjord lobster as a tartare with radish and peas in various textures, offering a fresh, light beginning. A chard roll with chanterelles, alongside another roll filled with chard sauerkraut and goat cheese foam, surprises with robust flavors and contrasting textures.
