The story

Lakeside Hamburg: Two Michelin Stars & Panoramic Fine Dining by Julian Stowasser

Fine Dining with a Panoramic View

Perched on the top floor of the The Fontenay hotel, Lakeside offers a dining experience defined by its extraordinary setting. Floor-to-ceiling panoramic windows frame the expanse of Hamburg's Außenalster, while a mirrored wall draws the light inward, creating a space of serene clarity. This is the backdrop for the intense, modern cuisine of chef Julian Stowasser.

The Chef and His Philosophy

Since taking the helm in March 2020, Julian Stowasser has brought a distinctive approach to Lakeside. His cooking is described as bold and unconventional, with unexpected combinations that deliver both lightness and a high density of flavour. Stowasser’s career includes stints at the three-star Restaurant Atelier in Munich and at Tetsuya's in Sydney, experience that informs his precise, creative work. In the kitchen, he leads a passionate, tightly-knit team that treats each plate as a work of art.

Recognition and the Dining Room

The team's dedication earned its first Michelin star in 2021, followed by a second in April 2023. This recognition is woven into the fabric of the restaurant, a source of pride for Stowasser and his crew. The intimate dining room seats just 40 guests, and a private room is available for up to ten. Host Michel Buder and his service team—awarded "Service of the Year" in 2020—ensure the experience is warm, attentive, and never intrusive. Here, the modern cuisine and the limitless view come together for a genuinely singular meal.

Concept Fascinating views and exceptional cuisine merge on the seventh floor of the Fontenay into an immersive experience. The 7-course menu (all dishes also available à la carte) combines precision and emotional depth. Culinary Style Julian Stowasser's cooking follows the philosophy of reduction – not as deprivation, but as a concentration on the essentials. Carabinero or quail appear surprisingly pure, while the Ike Jime salmon with fennel, pastis, and chicken dashi demonstrates masterful finesse. Stowasser also commands richer flavors: Hungarian-style short ribs with peppers and pearl onions gain a fresh dimension from Amalfi lemon. Finally, the Altländer apple is transformed by grains, salted butter, and caramel into a delicious delight. Wine On the wine list featuring 400 selections, top-tier wines from Germany and Burgundy meet characterful natural wines. Atmosphere With clean lines, the light-filled space creates a luxurious ambiance. The view over the Outer Alster is spectacular, and the charming team led by host Michel Buder ensures a seamless experience. Conclusion Menu, wines, service, location – in many ways, a highlight of Hamburg's dining scene.
