The story
Since 1989, the restaurant Nil has welcomed guests to its three-floor home on Neuer Pferdemarkt in Hamburg's St. Pauli district. The kitchen, run by owners Elisabeth Füngers and Steffen Hellmann, blends German culinary tradition with a light Mediterranean touch, creating modern international dishes from seasonal, local produce.
The atmosphere is spread across the ground floor, basement, and a gallery, with a garden open in summer. The à la carte menu changes daily, while a four-course seasonal menu is offered monthly. March brings dishes like chicory with ricotta dressing, apple, and walnuts, followed by a Jerusalem artichoke soup with roasted hazelnuts. Main courses might include pan-fried veal loin with roasted pumpkin and braised leeks, or catfish patties with dill sauce and potato-nut butter mash. April's menu features goat cheese from Bachenbruch farm with beets, watercress soup, fjord trout with mussel vinaigrette, and rack of lamb with asparagus. Desserts such as apple-cinnamon tiramisu with cranberry sorbet round out the experience.
Nil's consistent quality and accessible pricing earned it a Michelin Bib Gourmand in 2026, recognizing good cooking at good value. The team also operates Nil N°6, a neighboring event space with an open kitchen, available for private dining or cooking classes.
