At Restaurant Haerlin, located within the Hotel Vier Jahreszeiten on the Alster, Executive Chef Christoph Rüffer and his team have created a dining experience that has earned the highest accolades, including three Michelin stars. Since 2002, Rüffer’s cooking has been defined by imaginative compositions that highlight fresh, seasonal products. His philosophy is clear: the quality and origin of every ingredient come first.

The cuisine at this Hamburg institution is a refined take on classic French techniques, open to the world. A meal here unfolds as a six-course journey through the seasons. The menu might begin with a Gillardeau oyster with zucchini and green horseradish foam, then move to a Jacob’s scallop from the Namsos Fjord, pan-fried in nut butter with a warm truffle vinaigrette. A dish of grilled squab from Jean Claude Mieral, served in a cardamom-lemon pepper jus with smoked pistachio cream, showcases the kitchen’s precision. Chef de Cuisine Tobias Günther, named Sous Chef of the Year in 2018, is Rüffer’s right hand and brings his own modern, worldly perspective to the plates.

The dining room itself is a study in understated elegance. Chinese silk wallpapers and delicate gold embossing harmonize with soft crème and sage tones. A custom-made wine cabinet of glass and polished brass holds rare vintages, while four Nymphenburg porcelain cherubs, representing the seasons, have adorned the space since 1919. It is, as founder Friedrich Haerlin once said, like welcoming guests into a private home—only a little grander. For a more intimate view, the Chef’s Table seats up to eight guests directly in the kitchen, where you can watch the team at work over a curated menu and Champagne aperitif.

Culinary Style Sensorily complex, meticulously crafted, and creatively controlled: The kitchen presents flawless ingredients (many of them locally sourced) in harmonious contrasts – sweet and salty, creamy and crispy, familiar and new. Playing with luxury and texture, the Imperial caviar with smoked sea bass, pen shell vinaigrette, and cucumber offers: delicate fish, salty-creamy caviar, and crisp cucumber in fine balance. The pineapple-saffron sorbet with mezcal, basil distillate, and green jalapeño celebrates exoticism and fresh heat: fruity acidity, alcohol, and spicy herbs in an exciting interplay. Wine Sommelier Christian Scholz accompanies the menu with a sure touch, serving both great classics and rewarding discoveries. The legendary wine list featuring 1,500 selections is also available. Atmosphere The neoclassical hall with views of the Binnenalster offers an elegant stage. The service, led by Marius Jürke, operates with competence and charm.
