The story

Zeik Hamburg – Michelin-Starred Modern Cuisine with North German Soul

A Casual Fine Dining Staple in Winterhude

Since 2018, Zeik has anchored itself in Hamburg’s Winterhude neighborhood as a place where fine dining feels natural. Chef Maurizio Oster and his team serve Modern Cuisine that is both precise and unpretentious. Here, the dining room is relaxed, the open kitchen invites a glimpse of the action, and the conversation flows as easily as the wine. In summer, the terrace extends the experience outdoors.

The Michelin Star and the Philosophy Behind It

Zeik earned its first Michelin star in 2026 for high-quality cooking that stays true to its roots. The philosophy is straightforward: work with the best regional ingredients, let them speak, and never overcomplicate. Sustainability is built into every decision—from sourcing from small farms around Hamburg to fermenting, pickling, and making vinegars in-house. The result is a kitchen that elevates the familiar without losing its soul.

Two Menus, One Principle

Every evening, guests choose between two menus: one built around fish and meat, the other purely vegetarian. Both follow the same principle—each course highlights a single product, coaxing out its deepest flavors. Seasonal ingredients like salsify, Jerusalem artichoke, turnip, or celeriac take center stage, prepared with precision and creativity. The menus run six or seven courses, and a carefully composed drink pairing—alcoholic or alcohol-free—accompanies each one.

Vegetable-First Modern Cuisine

Zeik’s approach to Modern Cuisine is notably vegetable-forward. The team believes that vegetarian cooking isn’t an afterthought but a natural part of their identity. Root vegetables, herbs, and alliums are treated with the same respect as premium cuts of meat or fish. This isn’t trend-driven; it’s a conviction that the best flavors come from the earth, and that a great dish needs nothing more than a great ingredient handled well.

Atmosphere That Welcomes

The restaurant’s interior strikes a balance between understated elegance and neighborhood warmth. It’s a space where guests can dress up or come as they are, where the service is attentive but never stiff, and where the chef might stop by for a quick chat. Zeik calls it “casual fine dining”—a place where culinary ambition meets genuine hospitality, and where every meal feels like a shared moment rather than a performance.

Concept Young, casual fine dining with a focus on creative, regionally sourced seasonal vegetable compositions. Two menus, one of which is vegetarian. Culinary Style Maurizio Oster has further honed his individual style; his dishes, each exploring a single main ingredient in depth with sophistication, have gained in class, such as "Carrot" served as a rectangular portion of mash, ragout, mousse with herb oil, carrot buttermilk sauce, and a crispy roll with smoked carrot purée. Aromatic venison loin with walnut-celery praline, a classically intense jus, and additional celery variations. Deliciously rich and spoon-worthy: "Chicken 2020" with thigh ragout, fat foam, liver rice, and chive oil. Perfect harmony in the finale featuring mandarin, tarragon, and quark, paired with the 2018 Riesling Spätlese Bockstein by Nik Weis. New: a cheese and a spirits cart. Wine Sommelier Tobias Greve has also newly curated his wine list, featuring many top German estates with vintage depth, as well as exquisite selections from the Coravin system. Surprising non-alcoholic pairings, such as pear juice with smoked cream. Atmosphere The predominantly new service team under Nena-Sophia Richards operates with great energy. The updated design (room dividers, colorful paintings, more tables replacing the private room) is a definite improvement. Conclusion Maurizio Oster shifts into a higher gear in every respect while keeping prices guest-friendly, which also attracts a younger clientele.
