HILMAR, named after Hilmar von Münchhausen who laid the castle's foundation stone in 1570, reimagines fine dining with a refreshingly casual spirit. Here, the same uncompromising quality and meticulous care that defined the hotel's former gourmet restaurant find a new, lighter expression.
