The story
In the heart of the Weser Renaissance castle Schlosshotel Münchhausen, a new culinary chapter has begun. HILMAR, named after Hilmar von Münchhausen who laid the castle's foundation stone in 1570, reimagines fine dining with a refreshingly casual spirit. Here, the same uncompromising quality and meticulous care that defined the hotel's former gourmet restaurant find a new, lighter expression. The atmosphere blends elegance with ease, inviting guests to savour a symphony of flavours in an enchanted setting.
The kitchen's signature remains unmistakable: deep, thoughtful cooking rooted in classic cuisine with a contemporary twist. A rich variety of exceptional wines from the hotel's extensive cellar complements every meal. The Michelin star, awarded for high-quality cooking, underscores the precision and passion behind every dish.
HILMAR is open Wednesday to Saturday from 6:00 PM, by reservation only. It is part of the Schlosshotel Münchhausen, located at Schwöbber 9 in Aerzen, near Hameln.
