The story
At Handwerk in Hannover, the team describes their approach as "casual. fine. dining." This phrase captures the essence of the restaurant: a place where meticulous, Michelin-starred cooking meets a genuinely relaxed atmosphere. The open kitchen is the heart of the space, allowing guests to watch as each dish is composed, making the experience one that engages all the senses.
Head chef Thomas Wohlfeld leads the kitchen, working alongside owner Tanja Funke and sommelier Ann-Kristin Wohlfeld. Together, they have crafted a menu that changes with the seasons and focuses on "the quintessence" of flavour. The approach is built on innovative ideas and sustainable ingredients, resulting in modern cuisine that feels both thoughtful and approachable.
A sample six-course menu might begin with a tomato course brightened by raspberry and almond, followed by turbot with dashi and peas. Fennel appears with parmesan and potato, while quail is paired with pointed cabbage and shiso. A beef course is complemented by red pepper and pepper, and the meal concludes with cucumber, yogurt, and black garlic. A menu upgrade adds black truffle, brioche, and cheese for an additional €45. The six-course menu is priced at €149, with a wine pairing at €75 or a non-alcoholic pairing at €61; a five-course option is also available.
The recognition of a Michelin star speaks to the precision and quality of the cooking here, but Handwerk wears this accolade lightly. The dining room remains welcoming, and the service is attentive without being stiff. It is a place where the food is serious, but the mood is not.
Beyond the main restaurant, Handwerk also offers a second space just 200 metres away: a charming 1950s pavilion available for private cookery courses, exclusive dinners, and private events. The restaurant itself can be booked exclusively for corporate functions or celebrations with friends and family, seven days a week, for lunch or a bespoke evening meal.
For those looking to take a piece of the experience home, gift vouchers are available and can be collected Wednesday through Sunday from 3pm. Handwerk is open for dinner Wednesday to Sunday from 6pm, serving modern cuisine that is both refined and relaxed.
