A philosophy of equality

In Hannover’s Marienstraße, Jante takes its name from the Danish-Norwegian Jante Law, a code of humility and collective modesty. This spirit permeates every aspect of the restaurant: a warm, personal service that invites guests to slow down and forget the everyday. The interior and atmosphere are designed for decompression, with an open bar area offering a casual “SIP & BITE” concept – walk-in only, no reservation needed.

The team

Küchenchef Tony Hohlfeld drives the kitchen with ambition and innovation. His dishes are thoroughly considered, yet each component is continuously refined. “I want to be one step ahead of the zeitgeist,” he says. Chef Sommelière Mona Schrader, co-owner and wine talent, selects wines that intensify Hohlfeld’s colourful, flavour-packed plates. Together they have created a place where guests can both reminisce and discover something new.

The menu experience

Jante offers two tasting menus. The Long Story (200€, available Wednesday to Saturday dinner) and the shorter Short Story (160€, also available Saturday lunch). Both are built around six courses that highlight seasonal produce and a vivid interplay of aromas – dishes like Zander salad with mussel aroma, or cauliflower with cheese and pepper. A dedicated wine pairing (126€ for Long Story, 84€ for Short) rounds out the journey. The kitchen also accommodates vegetarian preferences.

A bar for spontaneous bites

The bar menu, “SIP & BITE”, lets you enjoy single plates without a reservation: ravioli with egg yolk, lobster with wild garlic, a “perverse” caviar and potato creation, or a lava cake with white truffle ice cream. Wines by the glass, beer, or champagne keep things relaxed.

Jante’s modern cuisine earned a Michelin 2-Star accolade in 2026, recognising “excellent cooking”. Yet the team’s guiding principle remains grounded: “At Jante, everyone is equal.”

Concept Over the past ten years, Mona Schrader and Tony Hohlfeld have cultivated their own distinct world of gastronomy with their “Jante”—a venue that increasingly draws an international crowd. Whether in terms of cuisine, wine, or ambiance: nothing here is standard issue. The restaurant offers 4- to 7-course menus. For spontaneous visits, the bar now entices guests with an extravagant snack menu featuring lobster, truffle, and caviar. Culinary Style Driven by a spirit of independence, Tony Hohlfeld’s creative cuisine can hold its own on the international stage. His pairings, such as char, whey, and ginger or peach, poppy seed, and radicchio, are strikingly different, yet never loud or provocative—a result of their often virtuosic execution. The careful proportioning of ingredients, the precision of technique, and the quality of the (often regional) produce speak for themselves. Wine Mona Schrader analyzes her husband’s dishes down to the smallest detail and succeeds in using unconventional bottles (frequently from Germany and Austria) to perfectly intertwine the aromas of wine and food. Atmosphere Unpretentious service, abundant wood, and candlelight set the stage for relaxed fine dining. There is also ample elbow room, as the cutlery is available for self-service in drawers built into the tables. Conclusion Independent haute cuisine that is firmly on the cutting edge.
