The story
Since 2020, chef and founder Viet Anh Nguyen has defined the kitchen at The Wild Duck in Hannover. His cooking is a deliberate fusion of Asian and French traditions, served in a casual fine dining setting. The restaurant describes its cuisine as modern, creative, and varied—built on seasonal and regional ingredients. The menu changes roughly every four weeks, ensuring each visit offers something new.
The core offering is a carefully composed five-course menu, available in both a classic and a vegan version. Current dishes include Hamachi with paprika, a vegan pho with scallions and coriander, Skrei with Jerusalem artichoke and pineapple, and beef with kale and celery. Desserts range from a coffee-and-blueberry creation called “To Origins – Robusta” to Roquefort with pumpkin and ginger. Guests can also add an upgrade course, such as The Wild Duck with Thai curry and pear.
Every menu can be complemented by a wine pairing that features exclusive and biodynamic wines. For those who prefer alcohol-free options, a non-alcoholic pairing of equal quality and variety is available. The restaurant lists the wine pairing at 67 € and the alcohol-free pairing at 51 €.
The Wild Duck has been listed in the Michelin Guide since 2023, a recognition that underscores the kitchen’s dedication to quality and innovation. The restaurant’s modern cuisine, with its clear Asian-French identity, continues to draw guests to Podbielskistraße in Hannover.
