This certified organic hotel and restaurant is built on a philosophy of constant, positive change, and that spirit is tasted in every dish. The kitchen, led by chef Marius Mirchel, focuses on natural, simple, and honest cooking. The restaurant’s commitment to certified organic standards, with ingredients sourced primarily from Demeter and Bioland producers in the region, has earned it the Michelin Bib Gourmand award for good quality, good value cooking.
The dining room reflects the cuisine’s ethos: simple and finessed. Tables and flooring are crafted from solid oak from sustainable forestry, while chairs are made by Team 7 and fabrics by Kvadrat. The walls are finished with eco-friendly clay, and an innovative ecological system circulates water to heat or cool the space. It’s an atmosphere of harmony and intention, where the focus remains on the food.
The menu changes frequently, dictated by the seasons. The kitchen offers a choice of set menus, including a "Werrastrand" menu, a vegetarian option, and a vegan menu. Dishes like lamb’s lettuce with a carpaccio of bread dumplings, cranberry vinaigrette, and baked pumpkin, or ravioli of Hokkaido squash in a Gruyère foam, showcase the kitchen’s ambition. The vegan menu, featuring a millet and lentil curry with baked Hokkaido and coconut-orange sauce, is prepared with the same passion as the meat dishes. The restaurant is also known for its homemade cakes, baked from great-grandmother’s recipes, and its extensive wine cellar.
