The story
Halfway between the historic university and the Neckar riverbank, the Merz family runs a pair of fine-dining restaurant and boutique hotel. At Weisser Bock, timeless elegance meets devoted craftsmanship. The kitchen draws from both regional and international sources – Schwetzingen asparagus sits alongside US Prime beef, Atlantic oysters pair with sparkling wine from the Bergstraße, and local beer accompanies Spanish Iberico. This international approach, rooted in the best ingredients, has earned the restaurant a Michelin recommendation.
The dining rooms are stylish and welcoming. In warm weather, guests move to the terrace in Große Mantelgasse, where the Mediterranean flair makes for relaxed evenings. The setting is central yet calm, just steps from Heidelberg’s landmarks.
The kitchen reinterprets classics while staying true to tradition. Starters like Hamachi with buttermilk broth, dill, finger lime, and pickled cucumber, or US beef tartare with Roscoff onion, crème fraîche, and Périgord truffle set the tone. Main courses include US Entrecôte with Madeira jus, braised veal cheek with swede and potato purée, and the classic Chateaubriand for two. Fish lovers will find line-caught turbot with Jerusalem artichoke and nut-brown butter foam, or zander with apple sauerkraut and pearl barley risotto. Desserts such as mango fresh-cheese mousse with sour-cream ice cream and a “Heiße Liebe” of vanilla, raspberry, and nut-nougat crunch round off the meal.
A dedicated wine list – noted by Michelin – offers thoughtful pairings, from a Deidesheim Riesling to a Spanish Reserva. Vegetarian options, including red beet risotto with forest mushrooms and sheep’s cheese, are available.
