The story
Die Alte Schule in Herford is more than a restaurant – it is a family story that began in 2001 when Bernd Tönsing took over the building and transformed it into a destination for thoughtful dining. Bernd, who earned a Michelin star in 1998 at his previous restaurant, brought decades of experience to the venture. Since 2017, his son Torben Tönsing has infused the kitchen with fresh energy. Torben trained at Michelin-starred restaurants in Germany and Berlin, including Fischers Fritz (two stars), and now leads the culinary team alongside his father. Together, they run both the restaurant and the adjacent BT Catering operation, offering private and corporate events.
The team’s approach is summed up in their own words: “We make (almost) everything, but we never compromise on the quality of our products.” Seasonal, sustainable ingredients drive the menu, which changes monthly with a rotating “Klassenmenü” (class menu). The cuisine is international in spirit – drawing on techniques and flavours from across Europe – yet grounded in the best local produce. The restaurant’s commitment to quality has earned it a Michelin Recommended distinction for 2026, a nod to its consistent, well-executed cooking.
The wine list is a serious affair, with a strong focus on German and French estates, from Riesling GGs by Dönnhoff and Kühling-Gillot to Burgundy and Loire classics. The setting, as the name suggests, is a former school – a space that feels both grounded and welcoming. Outdoor seating is available when weather permits, and the team also caters events outside the restaurant.
