The daily three-course Heimat menu translates traditional recipes into contemporary plates while showcasing the best of regional cooking. Suppliers operate within a fifteen kilometre radius, delivering wild game alongside hunter Klaus Bohrer, fresh trout from the Windsberger family, and Demeter dairy from Berschweiler. Freimut Stephan cultivates specialty mushrooms near Rhaunen, and local distilleries provide honey-based spirits to accompany each course. Every dish relies on these tight supply chains rather than imported staples.

The Room and the Stone Walls

Guests dine behind natural stone walls that once belonged to the Marienschwester order before the estate reopened as a retreat in 2009. The space balances monastic restraint with warm wood accents and practical seating arrangements suited for families and couples alike. Melina Besic oversees the front of house, ensuring service moves steadily through the evening sessions at six and eight o'clock. The architecture frames every meal without competing with the local cuisine itself.
