The story
Opened in 2015 by husband-and-wife team Sandra and Steve Eulenstein, this restaurant in the historic town of Idstein is built on a straightforward philosophy: simple, good eating. The kitchen style is light, modern, and regional, with international touches that keep the menu fresh and surprising.
The menu changes twice a month, following the rhythm of the seasons and what the local market offers. This commitment to seasonal ingredients is at the heart of the experience here. Whether it's a starter of smoked trout soup with horseradish or a main course of braised beef cheek on potato-leek purée with Serrano ham, the dishes reflect a deep respect for flavour and produce. A tasting menu might include marinated tuna with avocado and tomato-cumin fond, followed by Skrei cod on beetroot risotto, and a main of venison and veal loin on celeriac cream with fig. Meals finish on a high note with a half-liquid baked chocolate with papaya and black sesame ice cream.
