The story
In the small Bavarian town of Illschwang, the Weißes Roß has been welcoming guests since the 15th century. Now run by the Nägerl–Fleischmann family in the seventh generation, the inn has evolved into a 4-star-S wellness hotel without losing its roots. The kitchen remains firmly anchored in the region, sourcing predominantly local produce and drawing on the hotel’s own butcher shop for fresh, high-quality meats.
The restaurant’s menu is a confident take on Country Cooking – modern, refined, yet respectful of Bavarian classics. Seasonal ingredients guide the offering, and the wine list is carefully selected to match. This straightforward, quality-driven approach earned the Weißes Roß a Bib Gourmand from Michelin, recognition for good value and consistently good cooking.
For those seeking a more elevated experience, the gourmet restaurant Cheval Blanc – led by young chef Christian Fleischmann – presents multi-course tasting menus that explore flavour and technique with ambition. The hotel also houses a vegan restaurant called WURZEL, ensuring variety for all tastes.
The setting is pure Upper Palatinate: gentle hills, forests, and wide skies. Guests can hike, cycle, golf, or simply unwind in the 1,800 m² spa area. The historic building, carefully modernised, offers 43 designer rooms and suites, blending centuries of hospitality with contemporary comfort.
