The story
Claudia and Hinrich Schulze run Gasthaus Lege in Burgwedel, just outside Hanover. Their philosophy is built on fresh, seasonal ingredients sourced from the region, paired with an emphasis on flavor, heartiness, and a cheerful atmosphere. The restaurant’s dedication to this classic cuisine has earned it a Michelin Recommended recognition.
The kitchen offers two tasting menus that change with the seasons. The "Menü Gaumenfreude" is a journey through refined dishes such as Skrei fillet with baby turnips and purslane, or beef filet with tarragon mustard and Parmesan dumplings. The "Menü Gartenliebe" is a vegetarian counterpart, featuring creations like smoked chicory with orange and hazelnut, and a herb choux pastry with mushrooms and potato sauce. Both menus can be ordered in three to seven courses.
Guests can also look forward to special themed evenings. In March 2026, the restaurant hosts a "Menü der 80er Jahre," a six-course tribute to the classics of New German Cuisine from that decade, inspired by legendary chefs such as Eckart Witzigmann and Harald Wohlfahrt. For Easter, they offer a festive five-course menu and a separate six-course fish menu on Good Friday.
The restaurant is open Thursday to Saturday from 6 PM, and on Sundays and public holidays from 12 PM to 2 PM and again from 6 PM. Reservations for the same day are accepted by phone only.
