The story
For over a century, the Oberländer Weinstube has been a fixture in Karlsruhe. Founded in 1918 by the Rinderspacher family, the restaurant occupies a listed building from 1826, steps from the former Grand Ducal Court Theatre. The name pays homage to the “Oberland” (today’s Markgräflerland), the source of the finest wines that were served here from the very beginning. Dark wood panelling, hand-painted glass lampshades, and oil paintings from the late 19th century preserve the intimate, time-honoured atmosphere.
In September 2013, Peter Rinderspacher, the last owner and grandson of the founder, entrusted the house to chef Jörg Hammer and his wife Diana. Hammer had trained under Michelin-starred chef Günter Buchmann here from 1995 to 1998, and the couple knew the restaurant intimately. Diana Hammer, a wine connoisseur herself, became the creative partner for the cuisine. Together they embarked on what they call a “gentle revolution” – updating the classic cuisine without losing its soul.
Hammer describes his style as rooted in Franconian tradition, open to modern techniques where they serve the ingredients. “I’m too much of a Franconian to try molecular cuisine,” he says. “But a sous-vide calf’s liver keeps its wonderful texture.” The menu changes regularly, featuring dishes such as Barbary duck breast with parsnip and buttermilk, blankett of veal with morels and green asparagus, or grilled sea bream with pearl onions and smoked fish ponzu broth. Vegetables come from a local farm in Graben-Neudorf that specialises in old varieties. The wine list, built over generations, comprises around 1,000 labels, including rare and age-worthy vintages.
The restaurant’s dedication to classic cuisine has earned it a place in the Michelin guide, recommended for its consistent excellence. This recognition is the latest chapter in a story that includes a Michelin star from 1991 to 2013. The Oberländer Weinstube remains a place where fine food and wine, served with genuine hospitality, create an experience that feels both timeless and contemporary.
