The Dining Experience

Culinary Style Horsten Bender has long been synonymous with imaginative and varied haute cuisine, mastering the rare art of distilling clear flavor contrasts from numerous components. He remains faithful to his affinity for Asian, particularly Japanese, flavors and techniques. The breast of Burgaud duck from the Vendée is served with chicory and bigarade sauce – accompanied by foamed white pepper sauce and cranberry in a beautiful interplay of aromas. The IJsselmeer zander comes with pho, egg yolk cream, and coriander oil, while the deep-sea redfish (kaiser grenadier) from the Faroe Islands, cooked as briefly as possible, tastes wonderfully mineral. This is complemented by wonderful contrasts of orange oil, ginger-pumpkin purée, and a ginger-spicy kalamansi beurre blanc. Wine Extensive selection of top-tier wines from Baden winemakers, as well as French and Italian wines.
