Villa Hammerschmiede: Country Cooking in a Historic Villa Near Karlsruhe

In the small town of Pfinztal, just outside Karlsruhe, the Villa Hammerschmiede occupies a noble 1893 building that began life as a director’s residence for a hammer mill. Entrepreneur Norbert Schwalbe acquired the property in 1989 and transformed it into a hotel and restaurant, fulfilling a personal dream. The Michelin guide has recognised the kitchen with a Recommended rating, underscoring the consistency and quality of the classic country cuisine on offer.

Kitchen and Atmosphere

Since June 2015, chef Michael Grünbacher has been at the helm of the kitchen, supported by an experienced sous chef and a young, motivated team. Together they produce classic cuisine and country cooking that stays true to regional traditions without fuss. Guests may dine in the cosy “good rooms” or the light-flooded English Pavilion; when the weather permits, the terrace in the park-like garden is a favourite place to sit. The same menu is served in every dining room.

Diners can choose between the simpler Villa Lunch (available on weekdays) and a more elaborate five-course gourmet menu created by Grünbacher. The restaurant also offers takeaway menus – a “gaumengenuss” that is simply reheated and plated at home. An extensive wine cellar with more than 350 labels provides the perfect accompaniment, and private events can be hosted in the Kota grill hut or the atmospheric wine cellar itself.

A Family of Hosts

The staff aim to create a welcoming, familial atmosphere – “we wanted to be one family,” in the words of the founder. The villa’s history as a Krupp family residence still echoes in its generous proportions and careful renovations. Today, the Villa Hammerschmiede is considered one of the best addresses in the region, a place where classic country cooking and sincere hospitality meet.

Concept Extensive à la carte offering. A tasting menu in 3 to 5 courses and an affordable "Villa Lunch" in 3 courses. Culinary Style Since 2015, Michael Grünbacher has cooked based on classic French haute cuisine, which the villa has long represented: classic duck liver terrine with raspberry jelly and diced apples. This is followed by venison, presented as a roasted loin cutlet under a thin olive croquant crust, with port wine-braised shoulder served separately. Delicate wild-caught monkfish is served on tomato and pumpkin cubes with caper-apple relish and lime nage. Wine 250 selections, focusing on Baden and the South Palatinate. Atmosphere Classic table and dining culture with attentive service that refrains from presenting each course in excessive detail. A beautiful view of the charming park; from May onwards, the wonderful terrace is highly recommended. Verdict Elegant hospitality in a classic setting.
