The story
ICHI, located on Falckstraße in Kiel, is the vision of Shuichi Umino, an opera singer originally from Miyazaki, Japan. After years performing at the Kiel Opera House, Umino felt a calling to share the depth of Japanese culinary culture with his adopted home. In 2010, he opened “ann”, the first authentic Japanese restaurant in Kiel and all of Schleswig-Holstein. Over time, that restaurant evolved into ICHI, now a Michelin Recommended destination for Japanese Contemporary cuisine.
The name ICHI draws from the Japanese concept “Ichi-go ichi-e” – treasuring each encounter as a unique, unrepeatable moment. This spirit guides every aspect of the restaurant, from the serene architectural setting to the precision of the kitchen. Yuko and Shuichi Umino, both classically trained musicians, bring a musician’s sensibility to the dining experience: harmony, balance, and careful expression.
The kitchen, led by a team of Japanese chefs, focuses on seasonal ingredients sourced from northern Germany. Guests can choose a thoughtfully composed five-course menu or order à la carte, with highlights including sushi made from fresh local seafood and creatively interpreted warm dishes. The menu changes with the seasons, reflecting both Japanese tradition and the best of the region.
ICHI’s commitment to quality and authenticity has earned it a place in the Michelin Guide, recognized for its refined Japanese Contemporary cuisine. It remains the only restaurant of its kind in the region run by Japanese owners, offering a genuine taste of Japan in the north of Germany.
