Run by the Stein-Schiller family in the third generation, the restaurant is part of the intimate Hotel Stein, a place where the motto "Wohlfühlen in Koblenz" (feeling good in Koblenz) is taken seriously.

The kitchen is led by Mike Schiller, who earned the restaurant its Michelin star for high-quality cooking. The cuisine is rooted in the classic and Mediterranean traditions, but Schiller's approach is anything but rigid. The menu changes with the seasons, showcasing produce in its prime.

Two Experiences in One

Schiller's Manufaktur is actually two concepts under one roof. The Brasserie is a relaxed ode to France, serving classics like a traditional Bouillabaisse "kraftvoll und elegant" or a Filet de Veau Provençal. The atmosphere is one of "Begegnung, des Lachens und des köstlichen Verweilen"—a place for genuine connection over good food.

For the full fine-dining experience, there is the "Phantas-Tisch." This is a creative, plant-based surprise menu that Schiller and his team develop twice a year. In spring and summer, it is fresh, light, and colorful; in autumn and winter, it becomes hearty, deep, and aromatic. It is a showcase for vegetables and fruit in entirely new forms, paired with house-made drinks. An optional "Gemüse-Essenz" course offers an even deeper dive into these flavors, and a fish or meat course can be added for those who want it.

The restaurant also offers classic dishes like duck cooked in a salt crust, served in three courses, and a refined fish and shellfish menu. The focus is always on carefully sourced ingredients and handcrafted perfection.
